Strawberry-Maple Preserves: A Recipe by Christina Barber

Ingredients:

  • 5 cups ripe strawberries
  • 2/3 cup maple syrup
  • Juice of one lemon
  • Zest of one lemon

Method:

  1. Remove stems and slice strawberries.
  2. In a pot over medium heat, bring strawberries, maple syrup, lemon juice, and zest to a boil.
  3. Reduce heat and simmer for 10-12 minutes until the strawberries are tender.
  4. Mash the strawberries with a potato masher to achieve the desired consistency.
  5. Remove from heat and leave to cool.
  6. Once cool, store in an airtight container in the fridge.
